Redefine|BDL Hotels’ Chef Academy welcomes first recruits

Five budding chefs will spend the next year honing their culinary skills as part of Redefine|BDL’s nationwide apprenticeship programme delivered by Lifetime Training.

Redefine|BDL Hotels’ Chef Academy will see the group undertake a 12-month apprenticeship at properties including the Bedford Swan Hotel, Crowne Plaza London – Docklands, Crowne Plaza Marlow, The Langstone Hotel and Holiday Inn Manchester West – all of which are managed by the UK’s largest independent hotel management company.

Throughout the programme, the recruits will receive practical and theoretical training from a dedicated mentor.

The combination of on-the-job learning and specialist masterclasses will lead to a Level 2 Qualification in Professional Cookery, as well as guaranteed employment at Commis Chef level at one of Redefine|BDL Hotels’ properties for one year following graduation.

The recruits will also have the chance to win the coveted title of Star Apprentice – and one weeks’ work experience in South Africa – following a ‘Great British Bake Off’ style finale next year.

Niki Fincham, Group Learning and Development Manager at Redefine|BDL Hotels, said: “The Chef Academy is a fantastic opportunity for those with basic food preparation qualifications to further their careers.

“The combination of one-to-one training, coupled with regular masterclasses in areas ranging from fish and sustainability to pastry, will allow the recruits to explore potential specialisms and their creative side. We’ll also encourage them to harness their new skills by entering national skills competitions, and catering large-scale internal events.

“The hotel teams have each selected willing and able recruits, and I’m looking forward to following each of their journeys.”

It’s designed to give the apprentices all the skills and knowledge they need to progress in their careers, within a specialist environment, while giving the teams at the hotels the chance to pass on their extensive knowledge and build their mentoring skills.”

The apprentices will work towards their graduation, which is scheduled to take place in March 2016.
