Professional Cookery Apprentice Terry Dudeney (24) from The Old Ship Hotel has been named The Hotel Collection Apprentice of the Year.
Terry works at The Old Ship Hotel in Brighton, which is part of The Hotel Collection group. Terry has been working for the Company for 12 months, since August 2015.
“This apprenticeship has given me so much more than just a qualification, it has been the key to opening many new opportunities and challenges. I work with a talented team with so much experience in different dishes, styles and methods. I put my uses to whatever they want me to do, from preparing veg to helping out with plates at service. My aspiration is to be the best I can be, by learning as much as I can and to help others learn on the way, and one day be a head chef” – Terry Dudeney, Apprentice Chef

“Terry has been an absolute star since he joined. The dedication and commitment he has shown to completing his course and the passion he has shown for our business has ensured a smooth transition into the world of work. It’s been a pleasure working alongside Terry and I will absolutely be supporting his development going forwards.” – Paul Wright, General Manager, The Old Ship Hotel
“This is a truly incredible achievement for someone so young and with so many other pressures at home. Terry has been a joy to train and will go far in the industry.” – Sue Scott, Regional Trainer, Lifetime Training
Terry has graduated with a Level 2 NVQ in Professional Cookery, following 12 months of training delivered by Lifetime Training. To recognise this achievement six apprentices were invited to Billesley Manor near Stratford-upon-Avon to take part in a special evening dinner whereby each apprentice literally ‘brought something to the table.’ The different skills being showcased included chef skills, waiter skills and bar skills.
“I’ve had the pleasure of following the progress of our first cohort. With the support of Lifetime and our Learning and Development Manager Jennie Mackenzie we have seen the apprentices grow in confidence and develop skills that means they are now valuable members of our team. I’m certain we’ll see them leap forward and wish them all the very best for their futures.” – Jackie Kiley, Head of HR, The Hotel Collection
“The six young people who produced the food and presented it to their colleagues and families at this event have demonstrated exactly what apprenticeships mean today. They have the skills, the knowledge and dedication to succeed in the great hospitality industry. They have been truly exceptional and we look forward to welcoming them into the business as permanent team members. I extend our thanks and congratulations to all.” – Peter Manby, Managing Director, The Hotel Collection
